What I'm Thinkin Thursday - Celiac Diseas


I think that people hear that I'm on a Gluten Free Diet and assume that I'm actually not eating gluten just because it sounds fun or it's the new fad. When people say things to me such as "Oh, I've heard that's a really great diet" I want to slap them. Really, you think I'm giving up cake, pasta, bread sticks, seasoning salt, 90% of sauces and dressings because it's a great diet... Um, in case you haven't noticed I really don't need to lose weight. I'm not depriving myself from the things that I love because Eisabeth Hasselback is promoting it. I'm certainly not depriving myself because I feel the need to lose weight.
 
A lot of people have asked me why I stopped eating gluten. The answer: it made me sick! The textbook symptoms for Celiac disease were not the symptoms I had at all. To read more about the textbook symptoms you can go here.
While I did have some of the symptoms listed in that article such as Anemia (Iron Deficiency) & Vitamin D deficiency these aren't uncommon deficiency's. I live in Oregon - We don't see much sun & 90% of people living in Oregon have a vitamin D deficiency. Anemia runs in my family so I really didn't think much of it. 
 
What were my symptoms: Headaches was my biggest symptom. I had constant head aches. They usually started with in 10 minutes of eating. They were over the top, unbearable, and annoying. Advil wouldn't touch them! I was also experiencing some bloating and GI symptoms but those were things I felt I could handle. I had suddenly started having acne. I had never had acne in my teenage years and I was breaking out like crazy! Dandruff - out of control dandruff and no shampoo was controlling it. Eczema (this can also be linked to dairy and I'm also giving up dairy) which has gotten better but still not gone. Mood swings!!! Poor Adam had to deal with some major mood swings when I was eating gluten. Anxiety and I'd feel overwhelmed easily - also things I hadn't dealt with before. I've always handled stress well. 
 
Diagnosis: I was at my parents house one afternoon and it was around 3pm. I hadn't eaten at all that day and I didn't have a headache. I said something to my dad about not eating yet & that I didn't want to eat because I didn't want to get a headache. He looked at me and said "Karli, you need to go back on a gluten free/dairy free diet. This is out of control." I knew he was right. I started out just giving up gluten and diary to see if I felt better. For the first time in over a year I didn't have a headache all weekend.. I continued not eating gluten or diary for 2 more weeks. No headaches. After 2 weeks I added dairy back in - Still no headaches. I did notice though that adding dairy back into my diet definitely made me more congested. I had blood work done after about 4 weeks of being off of Gluten (IGG - 5 days later reaction, IGA & IGE - both are immediate reactions) IGG produced no reaction. IGE & IGA both produced huge reactions. My Doctor diagnosed me as a Celiac. I went 9 weeks with out a single ounce of gluten! 2 weeks ago my Dad had us over for dinner. He didn't realize that Johnny Seasoning Salt had wheat in it. He added a teaspoon of it to our meal and within minutes of finishing the meal I had a splitting headache & stomach cramps that lasted for a week. I didn't find out for 4 days that he had added Johnny Seasoning Salt to the meal. Adam later confessed that I had been bitchy all week. I also tied in the fact that I had been super stressed and overwhelmed all week. A teaspoon of Gluten set my whole body into panic mode. 
 
Comments: I have had a lot of people tell me that I can't be a true Celiac because "You don't have the typical symptoms". On a blog that I read a Nutritionist commented that the blogger couldn't have had Celiac because she didn't have true symptoms and that people who thought they might have a gluten intolerance didn't unless they had text book symptoms. To be honest reading that comment pissed me off. As a nutritionist she should know that Celiac disease and gluten intolerance effects everyone differently. No two Celiac's are alike.
 
Awareness: I wrote this post today in hopes that people realize how huge gluten intolerance is in the United States. I hope that this post will help one person who may be suffering from Celiac to realize that just because their symptoms aren't text book doesn't mean they don't have the disease! I also hope to maybe impact one person who knows someone with gluten intolerance or Celiac disease to understand that it is serious. Your friends or family aren't giving up these foods for fun. 
In my case I gave up Gluten to get my life back. I know many others have too.

Wedding Wednesday!

Happy Wednesday, Loves! 
We have a little over 5 weeks left until our big day so as you can imagine we're super busy with projects!

I told you all that I would show you our invites today BUT I think they deserve a post of their own so I can highlight our fabulous Stationary Designer. So I'll do a post on them sometime later this week.

We've been working hard to finish up our vows. We originally planned to use traditional vows but as we were starting to plan the ceremony and look for vows we just couldn't find anything that we really felt fit us. Adam struggles with expressing himself through words so it's been a challenge but I think that it will be so worth it when all is said and done. 

I am starting to plan the day of itinerary & am so going to be sleepy that day! We have to be at my parents at 630 to start getting ready! Yikes! I am at this point planning on sleeping at home with Adam that night. I just think we'll both get the most and best sleep if we're in our usual element and we're going to need it!

First dance... Adam expressed to me that he REALLY does want to share a first dance. So now we're in the process of finding a song. Any ideas? :)

Projects, projects, projects!! Where do I even start with this? We have so many projects to tackle over the next few weeks. We are doing children's baskets, OOT Guest bags, Stir Sticks, a Video to show at happy hour, ect. We also still need to finish up our gifts for our attendants and our parents! So much to do.

I had my first dress fitting last weekend. I love my dress and am so happy with my seamstress! I can't wait to show you all! :)

My first Bridal Shower is next weekend. I'm getting anxious for it & trying to figure out what I want to wear. I am leaning toward white pants, nude heels, and a cute colorful spring top? Thoughts?

Good Morning! :) 
What a difference 10 minutes makes in the morning! I got out of bed 10 minutes earlier then I usually do this morning and was able to get ready, enjoy my morning coffee from the couch rather than the car, and I still left the early! :) I am thinking I'm going to try to make this my new morning routine.

No Invites tonight

I know I promised you all a post on our invites tonight but my camera is dead and I can't seem to locate the charger. So I figured I'd leave you all with this hilarious video instead!!!

Getting Back on Track!


Hello, friends! I am sorry for my absence the past few months! I know I've said this a few times before (and I did mean it then too) but I'm working hard on becoming a better blogger! I plan to do a post tonight to show you all our invitations and save the dates.. Long overdue and I'm so so sorry!

Believe it or not, I do actually have a plan to get myself back on track this time.
I am scheduling weekly posts and daily goals for myself in the blogging world. I'll take the time now to share my daily goals and my weekly posts!

Daily goal - Make my way to comment on at least 3 blogs that I each and every day. I do read your blogs! I promise. In fact I read about 100 a day but I never get around to commenting. How many of you all do google reader? If you do then you'll know how easy it is to read the post, laugh, cry, relate, and move on to the next without commenting! But you all that is just rude. I know how much I appreciate your feedback and sweet words so why am I not showing the same support to ladies whose lives I love to follow? I'm going to get better.

Weekly Posts (Starting today):
Monday Minute - I was watching Oprah last week when she and Goldie Hawn were speaking on happiness. She said that if everyone took just one minute to sit in silence and breathe everyday we'd all be much happier. I've been trying to do that the past few days. So on Monday's I'll post inspirational pictures or stories from the previous week. The goal for this post is that it shouldn't take you all more than a minute to read so that you can then take a minute (or 10) to yourself and breathe. It should be a reminder to us all to take a minute for ourselves. 

Top 2 Tuesday's with Taylor - I used to be pretty good about linking up with Taylor and participating in Top 2 Tuesday but then I started to be a bad blogger and stopped posting at all, let alone linking up! I'm going to get back on board! :)

Wedding Wednesday OR What I'm Loving Wednesday - I will either do an update on wedding planning, or in less than 6 weeks once the wedding is over, a recap of the wedding OR I'll participate in What I'm Loving Wednesday! 

Thursday will be a Free Day - A day when I can blog about whatever is on my mind, a quote I'm loving, a picture that makes me smile or if I don't have anything to say I'll just take it as a day off.

Friday's finds - I'll post something that I found online that week that I thought was cool. It could be a wide variety of things, I could be all household, all clothing, ect. 

I may stray from this list from time to time. I may add something onto the weekly scheduled posts. I am going to try to remember to do birthday posts too! This for now is just to get me back into the swing of things! Back into the habit of blogging daily. I appreciate all of you who follow this blog and who have continued to follow me through my slumps! You all mean so much to me and I'm still shocked that you all find my life interesting enough to read. So again, thank you!
